I love breakfast! I love it so much that it has become a daily ritual for me. Throughout the years I became more and more conscious of my breakfast options and started replacing wheat and sugar with (to my understanding) more healthy alternatives. This has led to a nice collection of breakfast options as an alternative to the standard toast with honey.
One of the first things I replaced was my granola, because I simply could not find one without refined sugar in the store. In fact most of them had a least one ingredient I did not like. So, I simply started creating my own. Give it a try its super easy!
I tried different combinations, but this one has become my favourite:
2 cups of oats
1/3 cup sesame seeds
1/3 coarsely chopped walnuts
1/3 maple syrup
1/3 cup coconut oil, melted
spices: cinnamon, cardamon, salt, vanilla
Stir all ingredients and spread on a baking sheet. Bake in oven at 16O degree for 30-35min. Stir every 10-12min.
Make it your own: add hazelnuts or coconut flakes after 15 min of baking and return to oven for remaining time
Chocolate addict: simply add cocoa nibs after the whole mix has cooled down
Good for 3-4 weeks in an airtight container or in fridge up to 6 weeks
